Combing tomato with cucumber gives not only a pleasant taste, but also increases the nutritional value. Tomatoes are fat-burning foods that reduce inflammation and remove excess water retention in the body. Eating tomato helps to reverse leptin resistance. Leptin is a type of protein that helps in regulating the metabolism and controlling appetite. Tomatoes make you to get fuller and also cut down the level of calorie intake.
Cucumber and Tomato Vegetable Salad
Here is a plate full of cucumber and tomato vegetable salad that will help you cut down on your calorie intake.
- Cucumber – 2 large
- Tomatoes – 2
- Onions – 1
- Grated ginger – 1 tbsp.
- Salt – to taste
- Orange or lime – 1
- Honey – 1 tbsp.
- Apple cider – 1/4 tbsp. (optional)
Note: always wash your vegetables before chopping them into pieces.
Finely chop the cucumbers, tomatoes and onion to you desired shape. Add the vegetables into a bowl, sprinkle salt, add honey and cover.
Squeeze out the orange or lime juice into a cup, add the grated ginger, and apple cider. Also add a little warm water to the cup and mix all the ingredient in the cup THOROUGHLY. Allow the mixture to stand for 10 minutes. Sieve the liquid into another cup and pour it to the bowl.
Combine all the ingredients in the bowl together but make sure it is not too watery or salty. Serve and enjoy.
It’s okay if you don’t have apple cider and if you are allergic to lime use orange, ginger and little water to mix the salad BUT make sure you sieve the water because of the ginger particles. Do not make the salad watery, so be careful on the quantity of warm water you are adding.
Remember: apple cider vinegar is acidic, I advice you dilute it before using. This salad can be use as breakfast or dinner.
